“A very merry un-birthday to you, to you!”
Even though this post is for a birthday cake I made for my husband all the way back in July, it’s actually only a few days away from his half-birthday! Relevant…no? Oh, who cares. It’s cake, people!!!
I am going to share with you a simple and fun way to make a homemade layer cake!
Things You’ll Need:
Box of cake mix – any kind (and required ingredients, ie water/egg/oil – *I always cut the amount of oil in half and subsitute apple sauce!)
Two 9″ round cake pans
Frosting – I made my own buttercream(http://savorysweetlife.com/2010/03/buttercream-frosting/) but you can use a store bought kind and just change the color with your food coloring!
Cake decorating kit – (or use a ziplock baggy, place frosting inside and snip a small bit off one of the corners and viola! Instant pastry bag!)
Once you have mixed the cake batter, pour half the mixture into a greased cake pan. With the remaining batter, choose a food coloring you like and mix a few drops in. So fun!
Next, pour the mixture into the other greased cake pan and bake accordingly.
Once it’s finished baking LET IT COOL! If you try and slice layers too soon the cake will crumble. I even suggest placing it in the fridge for an hour or so after it has cooled for about ten minutes…(cover with plastic wrap!).
While the cake is cooling, food color your frosting!
Ok! Ready to slice! Just take one of the cakes and lay it flat on a cutting board. Bend down to eye level and slice right through the middle. If you want a step by step guide this is pretty thorough: http://www.wikihow.com/Cut-a-Cake-Layer-in-Half.
Ok, layer in the frosting! Go wild! It’s just getting eaten anyway, so live a little!
My husband is MAYBE the biggest fan of cake I have ever met, so I wanted to make him something special! Even my sister and brother-in-law who are on the Paleo diet had to try it…irresistible!
